Gluten Free Christmas Sugar Cookies!

Growing up, my parents (especially my dad) took baking Christmas cookies VERY seriously! We’d spend an entire day baking hundreds of cookies to package up and give out to neighbors and friends around the neighborhood, and I loved it! Since getting married, I’ve continued baking way more cookies than necessary around Christmas and giving them to coworkers, neighbors, and friends around town.

I started feeling sorry for myself that I wouldn’t be able to enjoy eating all the extra cookies this year since finding out about my food allergies a few months ago. There’s nothing I love more than eating sugar cookie dough and I was getting seriously bummed that I’d be missing out on that this year! Then I realized, why be mopey when I can message my friend Kara and see if she has a good GF sugar cookie recipe?! Of course she had one, and she was up for letting me share it with you today!

I’ve included her actual recipe, and I’m offering some dairy free, egg free substitutes since I’m allergic to those foods too. I used coconut flour, but she said that any gluten free flour will do!

Gluten Free Sugar Cookies!

2 cups coconut sugar
1 cup butter (or dairy free butter, or applesauce)
2 tbsp water
4 eggs (I use just yolks and added 1 more since I’m allergic to whites!)
1 tsp baking soda
4 1/2-5 cups gluten free baking flour
1 tsp vanilla
1 pinch of salt

Cream the first 5 ingredients together, then slowly add the remaining 3 ingredients. Chill in the fridge for a few hours, then bake at 350 degrees for 10 minutes!
