Pumpkin Chocolate Chip Muffins

I’ve said it before and I’ll say it again, I am a terrible cook. But I am an amazing baker! Last week we went to Costco for the first time in 4 years and one of the few things I bought was a Costco pack of canned pumpkin. Upon returning home, I realized it was way too much pumpkin and now I’m working on turning it into a load of pumpkin baked goods. First up on our list, these pumpkin chocolate chip muffins! They were easy enough for my kids to help out with, and were done in no time at all!

I love a good loaf of pumpkin bread, but sometimes we aren’t patient enough to wait for that to bake all the way and we turn to muffins instead! This recipe didn’t call for chocolate chips, but I added them anyways and I think we can all agree that was the right call to make.

Easy Pumpkin Chocolate Chip Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 1/4 cups granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin
  • 2 large eggs
  • 1/4 cup water
  • 1/2 cup chocolate chips

Directions

  1. Preheat oven to 350 degrees
  2. Mix dry ingredients together, set aside
  3. Add vegetable oil, canned pumpkin, eggs, and water together and mix until combined.
  4. Slowly add the dry ingredients to the wet mixture
  5. Stir in the chocolate chips
  6. Pour into muffin tins, bake at 350 for 22 minutes or until inserted toothpick comes out clean
