Slow Cooker Sweet n’ Spicy Pork Carnitas

Lately, I have been in the mood to try to recipes and cook more extravagant meals than what we’ve been having. Reagan is getting more adventurous with food and that’s inspiring me to go outside our normal weekly menu to prepare new meals we haven’t tried before! I recently discovered this food blog Cooking Classy and I am totally in love with everything she makes. I think because she posts so many taco recipes and I could eat tacos literally everyday 🙂

This recipe for Sweet n’ Spicy pork was modified from her recipe for sweet pork found here. I tweaked a few things and added a couple of ingredients to give it some spice and really love how it turned out! We will definitely be making this again.

It’s a classic dump everything into the crockpot and let it sit all day recipe, which is my favorite kind especially on Sundays! I love coming home from church and having dinner ready to go so we can eat right away.

I added onion, cheese, and avocado slices to my tacos, but this would be great with cilantro and pico de gallo too!

Ingredients:

-3 lb pork roast
-3/4 cup brown sugar
-2 cups chicken broth
-2 chiles in chipotle adobo sauce
-2 1/2 tsp chili powder
-1 tsp paprika
-1 tsp garlic powder
-Salt and pepper to taste

Directions:

-Place pork roast in crock pot. Whisk together the remaining ingredients and pour over the roast. Cover and cook on low for 8 hours. Cut the fat off of the roast, shred the meat, and return to the crock pot to simmer until ready to eat. Serve in tacos, enchiladas, or nachos.
