Last weekend was general conference for The Church of Jesus Christ of Latter Day Saints which is one of my favorite weekends of the year! We sit around in our pajamas, eat all the baked goods, and listen to faith based personal growth messages for two days straight. My favorite part is hunkering down with my family and just enjoying each other and inspirational messages without the pressures of the world for a couple days.
But my second favorite part is definitely the food.
It has always been our tradition to make homemade cinnamon rolls and icing for general conference morning, and I have really loved the several hour long process of baking this delicious treat for my family!
However.
With two kids, a full time blog, a small shop, and a side gig as an influencer manager I just don’t have the time to bake cinnamon rolls from scratch anymore! I was trying to think of some yummy baked treat I could quickly and easily make that my family would love, and I promptly remembered these glorious little golden treats called POPOVERS.
This is my mother in law’s recipe and it is simple, easy, and a fan favorite of everyone’s! It legit takes two minutes to whip up and only has 6 ingredients. You can totally make these in a normal muffin tin but they’re cuter (and automatically tastier) when they’re in a mini muffin tin like this one.
Ingredients:
-2 cups flour
-2 cups milk at room temperature
-6 eggs at room temperature
-2 tsp salt
-1 tablespoon olive oil
-1 tsp vanilla
Instructions:
1. Preheat oven to 400 degrees
2. Use hand beater to mix all ingredients together
3. Fill each cup 3/4 of the way
4. Bake for 20-25 minutes or until golden brown and soft.
5. Top with butter, jam, cinnamon, brown sugar, berries, whipped cream, etc.!
