Chocolate Peppermint Cookies with Essential Oils!

I have been dyyyingg to bake with essential oils for months and I finally had my chance yesterday! I decided to try a recipe for chocolate peppermint cookies BUT…instead of using peppermint flavoring and candy canes I wanted to use Young Living’s Peppermint Vitality essential oil!

One thing to note about these cookies is that they are supposed to be super rich and dense, and that’s what makes them so good! I was really concerned when I was mixing the dough together because it seemed really thick, but the cookies turned out perfectly

I made a full batch of these cookies and only used 4-5 drops of essential oil, and it was seriously the perfect amount! I wouldn’t do any more than that, for risk of the peppermint drowning out the chocolate flavor.

Chocolate Peppermint Cookies with Essential Oils

Ingredients:
1 cup butter softened
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
3/4 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
2 1/2 cups all purpose flour
1/2 cup chocolate chips

Directions:
1. Cream butter, granulated sugar, and brown sugar together with beaters or paddle attachment of a stand mixer. Add in eggs one at a time, then beat in the vanilla extract.
2. Carefully add 4-5 drops of Peppermint Vitality essential oil from Young Living. Mix well. 
3. In a separate bowl, combine flour, cocoa powder, salt, and baking soda. Slowly add flour mixture to butter mixture. Dough will be thick, but it’s supposed to be! 
4. Stir in chocolate chips. Shape dough into balls and drop onto a cookie sheet.
5. Bake in oven preheated to 350 degrees for 10 minutes. Take cookies out of the oven while still soft, then allow them to cool on the sheet for 3-4 minutes before removing to a cooling rack.

These cookies are seriously SO GOOD, you won’t be able to stop eating them! They make the perfect festive holiday cookie, it would be really fun to dress them up with some crushed candy canes on top. Enjoy!

    This was delicious and amazing. The only ingredient I didn’t have was the mint chocolate chips, but without that they tasted so amazing. Simple and delicious recipe!!!! everyone loved it when I made it.
