As some of you know, I had a bit of a gestational diabetes scare a few months ago when my one hour glucose test came back higher than normal. To prepare myself for the worst, I talked to my friend and wellness coach Alyssa about creating some low carb meal plan options for pregnant mamas who had gestational diabetes. Even though I passed the three hour glucose test just fine, this was kind of a wake up call for me and I was so happy Alyssa wanted to work together to create some healthy options for women who wanted to be more aware of what they were eating.
Alyssa did all of the leg work on this project – she brainstormed ideas, created shopping lists, put together meals, and counted macros to make sure everything was easy and convenient for YOU! We got together and prepped a meal one night for our families and it was SO good! And seeing how she used different foods to make a delicious and healthy meal so easily really inspired me to put down the processed foods and shop differently at the grocery store.
