That 70’s Jumpsuit and 5 (non-boring) Chicken Taco Recipes

Oh it’s not normal to pose on your kitchen island in a jumpsuit while eating tacos? I’m sure my husband was internally rolling his eyes like crazy when I asked him to take these photos, but thank goodness he’s learned over the years to just go with the flow and keep clicking away!

Since we moved into this house 19 days ago, we’ve eaten chicken tacos for dinner 13 times. We are maybe a little obsessed with tacos and maybe missing all the delicious taco places in San Antonio! But really, we love how easy these are to make and how many variations you can come up with, so I thought I’d share our favorite combinations we’ve tried over the last several weeks!

For all of these recipes, my husband pan friend chicken breast seasoned with taco seasoning, salt and pepper. We switched between flour tortillas and fried corn tortillas and both were good, just use whichever you’re in the mood for! We also mixed a can of black beans, a can of corn, and a small can of diced chili peppers all together as a quick taco filling to use throughout the week!

Chicken Ranch – Heat a tortilla on the stove. Add a sprinkling of cheese and let it melt completely before removing from heat. Add cooked chicken, chopped green onions, and a drizzle of ranch dressing!

BBQ Chicken – Add cooked chicken, chopped cilantro, and black bean/corn mixture to a tortilla. Top with BBQ sauce and crushed potato chips!

Traditional Mexican – Heat a tortillas on the stove. Add a sprinkling of cheese and let it melt completely before removing from heat. Add cooked chicken, black bean/corn mixture, chopped green onions, a slice of avocado, and salsa of choice!

Sausage and Spinach -Sauté beef sausage and chopped yellow onion. Add chopped spinach to the pan towards the end of sautéing and allow spinach to wilt. Mix with cooked chicken and add everything to a tortilla!

Breakfast Taco – Scramble an egg, add cheese and wait until egg is fully cooked and cheese has melted. Add cooked chicken, chopped green onions, and salsa of choice to a tortilla!
